Bread for breakfast is one of the most common, whether white, wholemeal, with seeds, toasted, with cheese or jam, we find it present in many homes.

But it is possible to face the morning without bread, with healthier, energetic and delicious options. Also, encourage us to have savory breakfasts.

Fruits, tofu, vegetables and mushrooms, as well as preparations with chia, are very nutritious proposals that we can incorporate. Without forgetting gluten-free cereals such as rice, buckwheat or millet, which are an ideal option for making porridge or also in a bowl.

Rice with sautéed fruits or vegetables, as well as mushrooms and tofu, is a common breakfast option in Asia that we can draw inspiration from.

Here are three breakfast recipes that will not only feed you, but get you out of the bread routine every morning.

Bread-free breakfast ideas

Here are three breakfast recipes without bread or flour that will nourish and give you energy in the morning.

1. POTATO PANCAKES (SWEET AND SALT VERSION)

We can accompany them with sweets or savory ones, although they go very well with savory ones and we can season them with our favorite spices, as well as with garlic powder and chopped parsley.

They are perfect both for their simplicity of preparation and for their low cost, and they are made much faster than it looks if we have cold potatoes in the fridge. In addition, this way we will take advantage of its prebiotic effect.

Ingredients for two servings:

  • 400 g of boiled or steamed potatoes from the day before
  • 1 tablespoon olive oil, linseed or rapeseed oil
  • 1 level tablespoon cornstarch or other starch, you can also use kuzu if you adjust
  • 1 pinch of salt
  • oil or margarine for greasing

For the salty option:

  • 1 teaspoon garlic powder
  • 1 teaspoon freshly ground black pepper
  • 1 pinch oregano/parsley/thyme

preparation:

  1. Peel the potatoes, which should already be cooked and very soft. We crush them well, so that there is a lump-free mass.
  2. Add cornstarch or starch.
  3. Add the oil and spices and finish forming the dough.
  4. Divide the dough into four and form balls. Then we crush them into round or oval pancakes.
  5. In a pan greased with hot oil, we brown our potato pancakes, in batches if necessary, and serve them hot with mushrooms and grilled vegetables, scrambled tofu or, in its sweet version, peanut butter and fresh fruit.

2. VEGAN ENGLISH BREAKFAST

English breakfast is usually served with bread, but if we use the potato pancakes we made before – as chipswhich are potato pancakes – we have the perfect accompaniment to our baked beans or for scrambled tofu.

Ingredient for 1 generous serving:

  • 100g of scrambled tofu
  • 200 g white beans cooked with tomato
  • 4-5 mushrooms
  • 1 tomato
  • 1 or 3 potato pancakes
  • tofu or legume-based vegan sausages, preferably homemade (optional)
  • Vegan sauces like HP
  • olive oil
  • pepper
  • spices to taste
  • common salt and kala namak salt

In this case, it is a combined dish of different recipes and preparations.

We started with the white beans with tomato, which is an English breakfast staple, but you can’t do that in the morning. We can make a good amount as they can be frozen perfectly. They can also be bought canned, vegan and at a very good price.

  1. To make white beans with tomato or baked beans, the beans are cooked in the oven after the regulatory soaking (although some people do it in the pressure cooker). When baked, they are flavored with tomato sauce, molasses (cane syrup or maple syrup works well for you), onions, and spices.
  2. For the scrambled tofu, you can follow this leek scrambled egg recipe, making it with or without leeks, and omitting the tomato bread. Don’t forget the kala namak salt if you like the taste of the egg it gives.
  3. Mushrooms and tomatoes are cooked on the grill with a little oil.
  4. We will also grill the sausages if we want to make a full breakfast.
  5. Finally, we take a leave of absence and make the potato pancakes to go with the dish.

It is usually served all together on a plate, with the baked beans in a jar or on toast, so they’re great on top of potato pancakes.

3. BASIC ROASTED OATS

I love porridge recipes in all their forms so much that I can’t pass up the opportunity to teach you how to make this baked oatmeal.

It is a very simple but time consuming recipe, so I recommend that you leave it for the weekend or make it and heat it up in the microwave, in a casserole or with a jet in the oven.

Here I leave you the basic recipe, but it is very common to fill it with fruit, jam, chocolate chips or other delicacies. My favorite option is homemade applesauce.

Ingredients for 2 servings:

  • 1 cup of oat flakes
  • ½ cup of soy or oat milk
  • 1 ripe banana
  • 1 tablespoon ground flaxseed
  • 5 g of chemical yeast
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • 1 teaspoon of nutmeg
  • sweetener to taste (you can use, for example, two tablespoons of cane molasses or maple syrup, in addition to brown sugar)
  • vegetable margarine for greasing
  • some oat flakes, vegetable yogurt and nuts (to decorate and accompany)

preparation:

  1. Preheat the oven to 180ºC.
  2. Mix all the ingredients and beat them
  3. Grease a baking sheet (or line it with parchment paper) and pour the ingredients onto the baking sheet.
  4. We added some flakes to decorate on top.
  5. Bake for 20-30 minutes, until lightly browned.
  6. Let it cool and cover with a little yoghurt and nuts in a decorative way.
