Enjoying healthy tacos is possible! This recipe that uses grilled broccoli, in addition to being a perfect option for vegetarians, helps to reduce the consumption of meat by those who are not. The fusion of flavors and colors is perfect!
Ingredients for 4 Grilled Avocado Broccoli Tacos
- 4 taco corn tortillas
- 1 carrot
- 2 red cabbage leaves
- 1 onion
- 1 avocado
- 150 g shredded cheddar and mozzarella cheese
- 150g sliced Emmentaler cheese
- 100g of broccoli florets
- 1 spoon of salt and pepper
- 1 tsp sweet paprika and garlic powder
- 20g extra virgin olive oil
step by step recipe
- Steam the broccoli florets for only about 4 minutes so they are al dente. Add the seasonings and Extra Virgin Olive Oil and mix well. Place in the airfryer or oven at 190º for 5 minutes.
- Chop the onion and cabbage and set aside. Peel and cut the carrot into strips using the potato peeler and sauté in a pan over high heat for 5 minutes. Meanwhile, cut the avocado into slices and set aside along with the onion and kale.
- Remove the broccoli from the oven and let it cool.
- Cook the taco tortillas back and forth in a skillet for 2 minutes. On top we place a slice of Emmental cheese and let it melt.
- Place the carrot strips and a few broccoli florets on top of the melted cheese. Add some grated Cheddar and Mozzarella cheese and heat in the microwave for 1 minute or in the oven for a few minutes to melt them.
- Now we decorate with our favorite toppings: a little onion, cabbage and avocado. Finally, some more grated Cheddar and Mozzarella cheese.
- We repeated with all of our Roasted Broccoli Tacos. Prepare! We can accompany it with a little hot sauce if we want.
