Restaurant: Deux, the new restaurant in the 11th arrondissement in Paris

A new table arouses the curiosity of onlookers rue de la Fontaine au Roi in Paris (11th). In a former creperie, Tiphaine Mollard and Romain Casas have just opened Deux, as a tribute to their respective roots. On one side of Savoy and on the other, Béarn.

A double gastronomic culture which serves as a common thread on the menu and which is found on the plate: tomme croquetas, crozet risotto, Tarbais bean hummus …

The dishes are finely executed, as with this delicious starter of beets cooked in a salt crust with eel and small tart apple cubes (€ 12).

For the dishes, the pork chop (26 €) is served with a pine-smoked celery and a juice that is too thick but full-bodied as it should be. The table sometimes offers a dish “for two”. That evening, the semi-wild duckling cooked on the trunk and lacquered is envious but is unfortunately out of stock.

Finally for desserts, the essential chartreuse replaces rum in an original baba (€ 11).

From a general point of view, the duo takes care of its sourcing without (too) highlighting it with the good bread of Jean-Luc Poujauran (Paris, 7th) or the spices – astonishing fried green pepper from Madagascar – from Sacré Français in Bordeaux. And the height of chic, it is Romain’s own grandmother who made some of the plates and containers.
