Iberostar Hotels & Resorts reduce food waste by 28% thanks to artificial intelligence

Iberostar Hotels & Resorts has made significant progress in its efforts to reduce food waste. In the first half of 2023, thanks to the implementation of the Winnow system’s artificial intelligence technology, the hotel chain managed to reduce its food waste by a remarkable 28%. This achievement is particularly impressive considering that the AI ​​was implemented in just six months.

Winnow technology has been installed in 48 of the more than 100 hotels that Iberostar operates worldwide. With this implementation, the chain has saved an incredible 1.5 million meals a year at the hotels that benefited from this device. This reduction not only supports Iberostar’s journey towards a zero-waste future, but is also an important step towards its goal of being carbon neutral by 2030.

Between January and June 2023, Iberostar managed to save a total of 735,000 meals, reduce waste weight by 11% and save 1,264 tons of CO2. From an environmental point of view, according to EPA calculations, this corresponds to avoiding the emission of 2,500 tons of CO2 per year, which corresponds to driving a vehicle 4 million miles.

The company started implementing Winnow technology in September 2022 with the ambitious goal of reducing 1,600 tons of food waste per year.

Megan Morikawa, Global Director of Sustainability at Iberostar, praised the partnership with Winnow, underscoring the chain’s commitment to a sustainable future. For his part, Marc Zornes, CEO of Winnow, praised Iberostar’s commitment to this noble cause.
