Did you know that it is possible to prepare “chips” in an alternative and healthier way? Yes, with cornmeal, gluten free.
With simple ingredients you can prepare these recipes to go out of the ordinary. Well-ground cornmeal, when cooked, is known as polenta and is very versatile in the preparation of many dishes.
French fries
These polenta fries aren’t really new, they’ve been around since grandma’s time. And today we redeem this preparation for the benefits of not containing gluten.
They can be consumed as any garnish, as a birthday snack or a pre-dinner snack.
The tip for making these fries is that the resulting “dough” of the polenta is firm enough to cut into sticks and that it maintains its shape.
Ingredients:
- 125 g of instant cornmeal (polenta) if it is organic better.
- 150 ml unsweetened rice, soy milk or almond
- 150 ml of water or natural vegetable broth to add flavor and nutrition
- 0.5 teaspoon of salt
- 1 teaspoon of rosemary
- 1 teaspoon of sweet paprika
- 1 pinch of pepper
- Olive oil

- Bring the vegetable milk, stock and spices to a boil in a saucepan.
- Remove the pan from the heat and add the polenta little by little, under light rain, stirring intensely with a wooden spoon so that no lumps form. Keep stirring the mixture until it starts to thicken.
- Transfer the polenta to a baking sheet and spread evenly. Cool in refrigerator for at least 20 minutes.
- When set, cut the polenta into crispy strips. Take care that they are not too long, so that they do not break when maneuvered during cooking.
- Grease a baking sheet with a little oil and place the cut strips of polenta on top. Brush them with a little oil with a kitchen brush.
- Place the “polenta potatoes” in the oven at 200°C top/bottom temperature for 30 to 40 minutes. Bake until golden.
Options for polenta chips

You can vary the seasonings used to your liking. They go very well with parsley and garlic, oregano, thyme, pepper, curry, etc.
They can be served with different sauces, not just mayonnaise or ketchup… they can be served with hummus, guacamole, carrot mayonnaise, sour yogurt, Baba Ganoushetc.
They can be fried in oil in a skillet instead of browning in the oven.
