- 1 cup cereal grains (wheat, barley, rice or oats). It is recommended to start with buckwheat seeds as they germinate the easiest.
- 2 cups of water
Procedure:
- Wash and dry the grains. It is ideal to first leave them in the water for half an hour to activate them.
- As with sprouts, place the grains in a glass jar with a little water.
- Once the grains have sprouted, add water (at least twice as much water as the seeds) and cover the jar with a clean napkin or canvas. Depending on the grain, germination usually occurs within 48 hours. But the fact that the radicle is already visible is enough to continue with the process.
- Allow the rejuvelac to ferment at room temperature for 24 to 48 hours.
- After this time, strain the Rejuvelac and store it in the refrigerator. It will last for a week.
The germinated seeds can be used for a second batch of slightly more intense rejuvelac that only ferments for 24 hours, or you can add them to the compost.
How to consume
Rejuvelac can be taken alone or added to other foods such as smoothies, juices, or salads. The recommended amount is 1 to 2 glasses per day.
It can also be used to ferment other foods (such as cheese and nut yogurt) or taken directly, alone, diluted in water, or combined with ice cream or green smoothies.
