Ming-Chi Kuo, an analyst specializing in Apple, says the company is testing with an electronic ink screen which can be for an external display or part of a foldable device.
E-ink is already used by Amazon Kindle, but Apple has been researching its use since 201. Now Kuo says the company is actually testing a color version.
The claim that this technology could be used as an external display due to its energy savings suggests that Apple could be considering a foldable smartphone. It also points to the possibility that you are thinking about a tablet.
Apple is testing E Ink’s Electronic Paper Display (EPD) for future foldable device cover screen and tablet-like apps. Color EPD has the potential to become a mainstream solution for mandatory coverage/second screen of foldable devices, thanks to its excellent energy savings.

While he doesn’t cite any sources, he seems to be saying this as something that’s happening at Apple right now rather than speculation.
Ming-Chi Kuo recently predicted that Apple will release a foldable iPhone in 2023, although he thinks the display will be high-res QHD+ rather than e-Ink.
